Chicken Parm Meatloaf

Because as of late some of my favorite recipes I've found on Pinterest end up MIA (the link is no longer good for whatever reason....) I've decided to start posting them here so I never lose them :)
This one is delish, what's not to love? Chicken Parm? numz. Meat loaf? numz.  smashed together, amazballs.  Here is where it is found (for now!)

Chicken Parmesan Meatloaf Recipe

Health version of the traditional recipe using beef
Ingredients
  • 1 pound ground chicken
  • 1 egg ( lightly beaten )
  • ½ cup Italian seasoned bread crumbs
  • 2 tablespoons garlic ( cloves, minced )
  • ½ cup fresh Parmesan cheese
  • ½ cup marinara sauce
  • ½ cup mozzarella cheese, shredded

Instructions
  1. Preheat your oven to 350 degrees.
  2. In a large bowl using your hands, combine the ground chicken, egg, breadcrumbs, garlic, and Parmesan cheese.
  3. Place mixture into a greased loaf pan and form into a loaf shape. Top the meatloaf with the marinara sauce.
  4. Bake for 50-55 minutes or until chicken is cooked. Remove, add the mozzarella cheese on top and return to the oven until the cheese is melted. Remove from the oven and let the meatloaf rest for 5-10 minutes before serving.
